Samhain Soul Cakes.

Soul cakes are traditionally eaten on around all hallows eve, they are a tasty treat to eat and can be left out as offerings too.

Ingredients: 340 grams all-purpose flour, sifted 170 grams granulated/caster sugar 170 grams butter ½ tsp ground nutmeg ½ tsp ground cinnamon ¼ teaspoon salt ¼ teaspoon allspice 1 egg, beaten 2 tsp of apple cider vinegar/white wine vinegar. Raisins (optional)

Method:

1.      Preheat oven to 200oC and line baking trays with grease proof paper.

2.      In a large mixing bowl mix all the dry ingredients together, mix in the butter until combined.

3.      Add the egg and the vinegar mixing with a wooden spoon until firm, using your hands combine the dough into a ball.

4.      Cover the bowl and chill for 20 mins.

5.      On a lightly floured surface roll the dough out, using a large round cookie cutter, cut out circles. Lay the circles on the lined baking trays. Using the wooden spoon handle, press crosses into the cakes. If using raisins also press into the top of the cakes.

6.      Bake for 12-15 minutes or until golden brown.

Can be kept in an air tight container for a week.
