I think it's specifically because of her contrast with Red Son!

Red Son is very outwardly expressive/blushy, and is (by my interpretation) in love with Mei:

Mei, in contrast, never blushes—and never demonstrates anything I would consider "romantic interest". In fact, the one time we see her do so is meant to signal she's out of character:

(Though, tbh 1x05 is just my special aro episode lmao. Romance being involved at ALL is a sign that MK is in a fictional reality)

What matters most to Mei, and what she is driven by, is ultimately her friends—the people cares about most:
