We can assume The Narrator put up these letters, as Stanley was unaware of the show coming up. Do you see that? "I love the way you ride elevators <3 xx" Is Stanley cheating on his wife? Yes. We know this is not his wife, his wife signs her letters and has different handwriting. Clearly this was someone who did not want to be traced back, as they didn't sign their name.
